Aglio Olio

with egg

Aglio Olio is one of my all-time favorite pastas. It's simple with a few ingredients yet it makes a satisfying meal.

I had some leftover fusilli but no prawns or chicken. I decided to create an aglio olio with a twist and see how it'll turn out.

I like it :) Plus, it's really simple to cook.

::: Cook the pasta till al dente and strain out the water. Heat up a saucepan with some olive oil. Throw in a generous amount of finely chopped garlic and stir fry till it slightly browns. (Don't fry it till it's brown and burnt!) Throw in the pasta and add a sprinkling of mixed herbs, pepper and salt. Give it a few stirs then pour in a beaten egg and quickly mix it up. You have to constantly stir and mix the pasta (to coat it with the egg) for a short while and remove the saucepan from the heat. The egg should resemble runny scrambled eggs and should not be over-cooked.

It looks bland and boring but it's tasty and makes a healthy meal :)
